Energize your day!


Gluten-free energy balls!

I'm excited to share one of my favorite snacks with y'all!  I absolutely adore these tasty little treats for a post-gym snack or paired with a cup of coffee for breakfast!  I promise you'll love how they taste and especially how easy they are to make!



Ingredients:
1 cup old fashioned oatmeal
1 cup unsweetened shredded coconut
1/2 cup ground flax seed (I have used unground and it worked great)
1/2 cup natural peanut butter
1/3 honey
1/2 cup semi-sweet or dark chocolate chips (I have a tendency to add a little more than the recipe states)
1 teaspoon vanilla


Place all ingredients in a large mixing bow and mix thoroughly.  Chill in the refrigerator 15-30 minutes.  Roll chilled mixture into 1-inch balls.  Store in an air tight container in the refrigerator.  ENJOY!!!
