This post may be a bit "out of season," but it is the result of a craving from last week :) so please enjoy.
I LOVE PUMPKIN. I have had the pleasure of trying pumpkin granola, pumpkin pie,
pumpkin roll, pumpkin crumble, pumpkin cookies, pumpkin bread, pumpkin muffins,
pumpkin bagels, pumpkin cupcakes, pumpkin frozen yogurt, pumpkin ice cream,
pumpkin cream cheese, pumpkin greek yogurt, pumpkin seeds, pumpkin gum balls,
pumpkin scones, pumpkin butter, pumpkin pancakes (every time I go to grandma’s
house), pumpkin caramels, pumpkin truffles, pumpkin coffee, pumpkin biscotti, pumpkin
creamer, pumpkin lattes, pumpkin smash smoothie, and pumpkin beer. If it's pumpkin, pass it on over!
And I’m going to share my favorite pumpkin chocolate chip cookie
recipe with y’all!
- 1 cup canned pumpkin
- 1 cup white sugar
- 1/2-cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2-teaspoon salt
- 1-teaspoon baking soda
- 1-teaspoon milk
- 1-tablespoon vanilla extract
- 2 cups semisweet chocolate chips
Directions
Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
Add vanilla, chocolate chips and nuts.
Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.
Enjoy hot out of the oven with a big glass of
cold milk! Yummy!
