Healthy and Happy Monday! Round 4: Spicy n Sweet Salmon


Spicy n Sweet Salmon
I searched the Internet for a delicious salmon recipe and I came across this tasty looking one – http://storyofmylifetheblog.blogspot.com/2011/08/most-delicious-salmon-recipe-in-world.html
As soon as I started cooking I realized my spice rack didn’t house several of the ingredients and my hunger outweighed my desire to go to the store, so I made several modifications.

Salmon:
2 Alaskan Salmon fillets, about 1/2 lb each (remove skin)
1/2 tsp paprika
1/4 tsp cayenne pepper
1/4 garlic salt
1 tsp brown sugar
1/2 tsp organic sea salt
Pure maple syrup

Preheat oven to 425 and line a baking dish with foil.  Place salmon in dish.
Mix all spices in a small bowl and sprinkle over salmon, coating it well – I sprinkled additional spices and brown sugar on top of the salmon to make sure it was entirely covered. 
Bake salmon for 25 minutes or to desired doneness.  Once out of the oven, drizzle with maple syrup and serve!

My sides included fresh cut pineapple and roasted Brussels sprouts – clean and cut sprouts in half, season with salt, pepper, garlic salt, and freshly cut garlic, sauté in a pan w/ butter or olive oil until they brown on both sides. 

Workout:
Modify the times below to match your best 5k mile time.
3 x 800 meters at 6-minute mile pace (sub 3:00) with 1-minute rest between intervals
4 x 400 meters at 5:25-minute mile pace (sub 80) with 1-minute rest between intervals
5 x 200 meters at 5-minute mile pace (sub-40 seconds) with 30 seconds rest between intervals
