Peanut Butter Protein Cookies

No butter.  No sugar.  No flour.  No problem!  I was pleased as punch with how these cookies turned out, they are guilt-free, moist, and super duper easy!  I hope y'all enjoy them as much as I do!

Ingredients
  • 1-cup natural crunchy peanut butter
  • 1 whole egg
  • 1 egg white (3 tablespoons)
  • 2 tablespoons applesauce (I made homemade unsweetened applesauce – recipe below)
  • 1-cup gluten free oats
  • 1/3-cup protein powder (I used ½ vanilla and ½ peanut butter cookie)
  • 10 Stevia packets
  • 1-teaspoon baking soda
  • A pinch of salt
  • ½ cup dark chocolate chips (or more if you fancy)
Directions
  1. Preheat oven to 350 degrees
  2. Line baking sheets with aluminum foil and spray with Trader Joe’s Coconut Oil spray
  3. Mix all wet ingredients thoroughly.  Combine all dry ingredients and mix with wet ingredients.
  4. Moisten your hands to prevent the batter from sticking to your hands.  Roll into balls.  Place on prepared baking sheet.  Bake for 8 minutes.

Homemade applesauce
Ingredients
  • 4 apples – peeled, cored, and chopped
  • ¾ cup water
  • A TON of cinnamon

Directions
  1. In a large pot combine apples, water, and cinnamon.  Cover and cook over medium heat until apples are soft.  Allow to cool, then mash with a potato masher or sturdy whisk.
