No butter. No sugar.
No flour. No problem! I was pleased as punch with how these cookies turned out, they are guilt-free, moist, and super duper easy! I hope y'all enjoy them as much as I do!
Ingredients
- 1-cup natural crunchy peanut butter
- 1 whole egg
- 1 egg white (3 tablespoons)
- 2 tablespoons applesauce (I made homemade unsweetened applesauce – recipe below)
- 1-cup gluten free oats
- 1/3-cup protein powder (I used ½ vanilla and ½ peanut butter cookie)
- 10 Stevia packets
- 1-teaspoon baking soda
- A pinch of salt
- ½ cup dark chocolate chips (or more if you fancy)
Directions
- Preheat oven to 350 degrees
- Line baking sheets with aluminum foil and spray with Trader Joe’s Coconut Oil spray
- Mix all wet ingredients thoroughly. Combine all dry ingredients and mix with wet ingredients.
- Moisten your hands to prevent the batter from sticking to your hands. Roll into balls. Place on prepared baking sheet. Bake for 8 minutes.
Homemade applesauce
Ingredients
- 4 apples – peeled, cored, and chopped
- ¾ cup water
- A TON of cinnamon
Directions
- In a large pot combine apples, water, and cinnamon. Cover and cook over medium heat until apples are soft. Allow to cool, then mash with a potato masher or sturdy whisk.
